Place roughly chopped strawberries and coconut water into blender and blend until smooth. Add lemon juice if using. Pour mixture into your ice lolly mould. Place a wooden stick into each (or follow the directions of your mould). Freeze for at least 6 hours.
Melt chocolate, stir in the coconut oil and pour mixture into a drinking cup. Let the chocolate cool slightly, then take the lollies out of the moulds and dip them in the chocolate. The coconut oil should make the chocolate harden quickly. Eat straight away, or return to the freezer to enjoy later!
